Greek Pizza

Greek pizza!

Pizza in Ancient Greece:
The classic Greece shows to have known a wide range of examples that can be considered "archetypal" versions of pizza: flat pies or buns of all kinds appear to be very popular and widespread foods all over the classic age.We find numerous testimonies of Greek writers regarding these different kinds of "pizza", the so called "maza" in ancient greek: testimonies that punctually we meet again in the Latin world and ancient Rome where, among other leavened or not versions of this bun, we find the "placenta" and the "offa", prepared with water and barley, the cereal which the alimentation of the Latin’s was based on.
In Greece, the history of pizza started in 1970, when Greek immigrants of Canada brought the tradition back to our country by starting the Portofino and Roma Pizzerias. From the 1980s the progress of the marketplace started and in the next decade, the buyers showed great interest in the delivery which set off production to 85%.

Pizza, without giving credence to other fanciful hypotheses about its origins, presents itself as a typical food of the civilizations blossomed on Mediterranean Sea's basin. And in one of Mediterranean's Queens, Naples, pizza will find its fatherland and the starting point of its worldwide diffusion.
Greek pizza can refer to either of two styles of pizza. One usage refers to a pizza with typically Greek ingredients as toppings: feta cheese, gyros, Kalamata olives, spinach Geo, and the like. The other usage refers to the pizza crust rather than its toppings. Greek pizza (in opposition to Italian pizza) is baked in a pan, instead of directly on the bricks of the pizza oven, and has a thick, chewy crust that is usually quite oily.

A really delicious recipe for Greek pizza!
Ingredients:
½ cup mayonnaise
4 cloves garlic, minced
1cup crumbled feta cheese, divided
1 (12inch) pre-baked Italian pizza crust 1
½ cup oil-packed sun-dried tomatoes, coarsely chopped
1 tablespoon oil from the sun-dried tomatoes
¼ cup pitted kalamata olives, coarsely chopped
1 teaspoon dried oregano
2 cups baby spinach leaves
½ small red onion, halved and thinly sliced

Folders:
1) Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and ½ cup feta in a small bowl. Place pizza crust on a cookie sheet: spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.
2) Toss spinach and onion with the 1 Tb. sun dried tomato oil. Top hot pizza with spin ach mixture and remaining ½ cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer.
3) Cut into 6 slices and serve.
